Title: Applying Six Sigma for Process Excellence

Course Focus:

The term Six Sigma is a fact-based and data-driven philosophy of quality improvement which has been found to be highly effective for process improvement in a large number of companies across many industries. Lean Production is “a socio-technical production system whose main objective is to eliminate waste by concurrently reducing or minimizing supplier, customer, and internal variability.” While originally developed by Toyota for automobile manufacturing, the concepts and tools of Lean Production is now widely used in both manufacturing and service sector organizations for process improvement. During this course, the participants will get a background of the Lean Six Sigma approach (combination of Six Sigma and Lean Production) within the context of hospitality businesses. The format of the course involves case studies, readings, class-discussion, and a series of hands-on exercises and demonstrations. We will discuss many different applications and potential benefits of Lean Six Sigma for process excellent for hotels and restaurants.

Key Benefits:

This course is to provide the participants with the background of a highly effective approach for process excellence in the hospitality industry. The participants will learn many hands on techniques that can be directly applied to their operations.

Topics Include:

  • Understand the five laws of lean six sigma (market; flexibility; focus; velocity; and complexity and cost).

  • Discuss how lean thinking can be effectively applied to hospitality businesses.

  • Learn lean principles (e.g. Kaizen, Pull production; Takt time, JIT) for waste elimination and productivity enhancement.

  • Learn the most effective Six Sigma and quality improvement techniques such as statistical process control, Melcolm Baldrige Framework, ISO 9000, ISO14000, and teachings of quality gurus.
